Chicken Piccata!!!

I have so many dinner recipes to share with you all on here and i really look forward to presented them both in video and image step by step instructions.

They will range from your every day simple weekly dinner and family meals to healthy diet meals and then some that will require a little more effort and preparation, in cooking for a dinner party or special occasion.

Today i'm starting with a very simple dinner recipe that can be enjoyed by all the family or easliy prepared for a dinner party main course.


I had my lovely father in law come to stay during the week, he is the most easy going gentleman and i love him dearly. My daughter Vanessa was so delighted to have him stay with us and he entertained her all evening while i set about cooking us something nice to eat.


While most people would cook something familiar as you really should as you would want to be able to cook without a recipe, so that you can show the cooking process while talking to your guests. I decided though that i would try something different as Grandpa was happily engaged with Vanessa and he is just so easy going i knew if things went 'pete tong' he would forgive me!!!


I served him your simple classic retro prawn cocktail starter packed with juicy prawns and a delicious sauce that i will share with you in my starter category, its just one that will never go out of fashion and he loves it. He enjoys a drop of wine and always has the best wines with him so we enjoyed a glass as i played our favourite Andre Rieu live from Vienna in the background and then i got started on my main course.

Here are the Ingredients : (serves 2) 2 large organic boneless and skinless chicken breasts 2 tbsp flour (all purpose or plain) 2 tbsp fresh Parmesan cheese finely grated 1 tsp salt 1/4 tsp black cracked pepper 4 tbsp unsalted butter divided 2 tbsp olive oil 4 large cloves garlic minced

60ml cup dry white wine (optional) 250ml cup chicken stock 2 tbsp fresh lemon juice 4 tbsp brined capers rinsed 4 tbsp fresh parsley chopped Parmesan Cheese to serve

I seved with roasted baby potatoes, fresh asparagus & brocolli florets.

Beautiful served also with pasta or rice.
