Party goers love deviled eggs and these little devils are sure to delight at any party especially an upcoming Halloween celebration!
Cutomizing your own deviled eggs is super fun. Traditional deviled eggs? Forget about them!!! While a simple devilled egg recipe is always welcome, i thought i would show you a few different ways to jazz up your eggs. So here's TWO fun recipes that puts the yolk into the Avocado hole and the Avocado acts as the yolk in the white hole...... sounds a bit crasy?? Trust me, they are so delicious both ways and super simple to make!!!
Option 1:
These Avocado Devilled Eggs make sophisticated appetisers and are sure to impress.
Ingredients: Makes 6
3 large eggs
1 avocado, halved, seeded and peeled
1 tablespoon Mayonnaise of choice
2 tablespoons chopped fresh cilantro leaves
1 tablespoon freshly squeezed lemon juice
Zest of 1 lemon
Salt and freshly ground black pepper, to taste
1/4 teaspoon cayenne pepper
Suggested Topping: Thinly cut pepper for horn decor. These would also be perfect with a sprinkle of crispy bacon bits on top, decorate to suit your theme.
Directions:
Place eggs in a large saucepan and boil for 12 minutes. .Drain well and let cool before peeling and cutting the eggs in half lengthwise, reserving the yolks. In a small bowl, mash the yolks and avocado with a fork until chunky. Stir in mayonaaise, cilantro, lemon juice and lemon zest; season with salt and pepper, to taste.Use a pastry bag fitted with decorative tip to pipe into the eggs, top with cayenne pepper and bacon bits if required. Simple as that!!!
Option 2:
I thought I would turn this one into a bit more of a main meal by adding the devilled egg filling to an Avocado hole, its an amazing appetiser and it also works out perfect as a really satisfying lunch because they’re loaded with monounsaturated healthy fats.
Ingredients: Makes 4 halves
3 hardboiled egg yolks
2 avocado halved
1 Tbsp mayonnaise of choice
1 Tsp Mustard
1 teaspoon white vinegar
Salt & pepper
1/4 tsp Smoked paprika, sprinkle for garnish also!
Directions:
Place eggs in a large saucepan and boil for 12 minutes. .Drain well and let cool before peeling and cutting the eggs in half lengthwise, removing yolks to a medium bowl, and keeping the whites for more Option 1 filling.
Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, pepper and paprika, and mix well.
Transfer the mixture to a piping bag fitted with a tip and pipe into the middles of the avocado halves. Sprinkle generously with paprika. How Simple are these and they look great!!! Your guests will love them.
