Baked Apple & Cinnamon Oatmeal

Baked Oatmeal is a warm, filling, most satisfying breakfast. This Autumn flavored version features tender apples, warm spicy cinnamon, and sweet maple syrup for a cozy breakfast that’s sure to become a new favorite! It’s so easy to make ahead of time and reheat on busy mornings!



I still love a smoothie or smoothie bowl for brekkie no matter the temperature of the morning but for those colder mornings a bowl of something warm can really set you up for the day or even can be enjoyed as a late night snack!


I would bake it up at the start of the week and then have plenty of oatmeal for 5 mornings throughout the week. It’s kid friendly, too – Vanessa absolutely LOVES this apple version.



It’s loaded with healthy ingredients — oats, applesauce and apples. The eggs bind it all together, and a light drizzle of coconut oil (or butter) makes it taste like a treat.


OK!!! Let’s bake this!!!


Ingredients

420ml unsweetened vanilla almond or cashew milk (any milk product can be used)

2 large eggs

5 Tbsp maple syrup

4 Tbsp coconut oil or 50g butter, melted

50g unsweetened applesauce (made my own with 1 Large Cooking apple)

300 grams oats, gluten-free as needed

1 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon allspice

2 finely chopped apples (Red or Green)

Optional for topping: 1/2 cup chopped walnuts, peacans or Almonds

Optional garnish: whipped topping, ice cream, yogurt, drizzle of chocolate, maple syrup, and/or fresh fruit


Instructions

Adjust the oven rack to the lower third position and preheat the oven to 180°C.

Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray.


Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan

Top with nuts, if desired. (Or stir into the oatmeal.)

Bake for 35 minutes or until the center appears almost set, which gives us a soft oatmeal. For drier and more solid baked oatmeal, bake until center has set. Cool for 5 minutes before serving. Spoon or slice and serve with yogurt or maple syrup if desired. Cover leftovers tightly and refrigerate for up to 1 week.
