HEALTHY FISH PIE RECIPE

This healthy fish pie is so easy to make for the family and is so comforting on these cold evenings. I’m trying to get back to a healthy balance this Month and creating new healthy low fat food along with some healthy snacks to balance it out and keep me sane!!!

Making this healthy fish pie recipe is so so simple. All you really need to do is boil the potatoes. Then meanwhile, heat up the milk and flour with a little butter until it thickens.


Then place your fish in the bottom of a baking dish, followed by the sauce. And top with mashed potatoes with a sprinkle of low fat cheese. The whole dish is in the oven for about 20 to 25 minutes. And that’s it!


All you need is to choose you fish, I’m using three different types, one smoked as I love using smoked fish but if you’re not a big fan just substitute with the regular stuff. I’m also going to throw in some yummy prawns!!! Basically use your favourites or whatever fresh fish you can get your hands on.


INGREDIENTS:


1 kg potatoes peeled & quartered

390 g skinless & boneless fish pie or

130g each of salmon, smoked haddock and cod, diced. 150g fresh Prawns

25g flour

25g low fat butter spread

2 bay leaves

Salt & Pepper

1 tsp mustard

400 ml milk semi or skimmed

2 leeks

3 scallions

20g reduced fat cheddar grated


INSTRUCTIONS


Preheat the oven at 200 degrees.


In a large saucepan, boil the potatoes until tender.


Meanwhile, in a saucepan or if you have a Creuset dish that you will be using for the pie, melt the butter over medium-low heat, then add the flour. Stir constantly with a wooden spoon in a figure-eight motion for even cooking. In 3 to 5 minutes, you'll have a light roux that should puff slightly.


Start to gradually add the milk and keep stirring until it starts to thicken up. Add bay leaf and mustard along with seasoning and keep stirring until it’s thickened to your liking.


Now place the diced fish in along with the leeks and spring onion and make sure everything is coated well, but remove the bay leaves.

Next, mash the potato, adding a dash of tbsp or two of milk and salt until creamy and spoon over the top of the fish in white sauce. Season to taste.


Create grooves and peaks with a fork and sprinkle over the low fat cheese and bake in the oven for 20 to 25 minutes until golden.
